You’ve had a stressful day at work, you just managed to get your ass to the gym and now you have to make a meal and you just can’t be bothered. Do you ever have one of those days too?
I love to cook, I really do…but sometimes even I find it hard to find the motivation to made a delicious meal when all I want to do is sit my ass down.
This delicious pasta sauce is so quick and easy to make. It can be made ahead and stored in the freezer for up to a month. I absolutely love this dish and is my go to food when I want something fast.
Chorizo is a fantastic source of protein and I’ll be honest I have a little addiction to the stuff. You just have to be careful you don’t overload on the beautiful cured meat. Although it’s a good fat, it should be consumed in small quantities. Sometimes easier said than done though.
I’ve made this meal for two people as I love really saucy pasta however if you add a little extra pasta then it makes great leftovers for lunch the next day. I’ll be honest there is always loads of leftovers when I’m cooking. Am I the only one who just can’t work out quantities correctly with pasta? I always seem to make enough to feed a family of 8.
If you want to change things up then add chicken or if you like a vegetarian option then use Tofu. In fact this sauce is delicious just on it’s own!
I’ll admit I’m sometimes an absolute cheap skate and won’t justify the extra quid of two for fresh garnish however with this recipe you need the fresh basil. The fragrance, taste and smell is glorious.
Sometimes the simple, quick recipes are the best!

- 1 tsp coconut oil
- 100g Chorizo
- 2 garlic cloves, crushed
- 400g tin chopped tomatoes
- 1 tbsp. tomato puree
- 1 tsp sugar
- 100ml vegetable stock
- Handful Fresh Chopped Basil
- Tortellini Pasta
1 Heat the oil in a pan over a medium heat. Add the garlic and chorizo and allow to sauté for 1-2 minutes.
2 Add all the other ingredients into the pan, except the basil, reduce the heat and simmer for 10 minutes.
3 Meanwhile cook the pasta for 10 to 12 minutes.
4 Add the basil to the sauce and stir well. Meanwhile drain the pasta and add to the sauce. Mix well together and serve in warm bowls with fresh basil to garnish.
