Quick and Simple Sausage Pasta

Who doesn’t like sausages? No longer are they just enjoyed as a dirty breakfast roll, now you can enjoy them in your dinner too. And they come in so many varieties! Gone are the days when they were seen as unhealthy and fatty. Now you can buy low fat sausages, chicken sausages, protein sausages, fruit infused sausages and now vegan sausages. Everyone can now enjoy a good big sausage.

This is one of the first dishes I ever made when I began my #52weeksoffood challenge back at the beginning of 2016. I had been following the Body Coach for a while and seen an Instagram video of a pasta dish using sausages. It looked super easy and really tasty.

I tried the recipe and it was great. Since then I have created my own version of the recipe to suit my own taste. I’ve added lots of broccoli as for some reason I have an addiction to the stuff and like to add it to everything at the moment. Although that is not a bad thing as broccoli is a major super food and has so many benefits to your diet.

If you don’t like broccoli then substitute it for something like kale, peas or spinach, these also make great additions. This recipe is a great post workout meal. It provides you with a source of protein and carbs to help your body recover. Plus it’s all cooked in the one pot so I have hardly any dishes to do either.

Now here’s the best bit. Everybody knows I love a good bargain. This meal is the ultimate bargain and especially good when I get to the end of the month and I’m totally skint.

The cost for all the ingredients is about £4 and will easily feed up to 6 people, costing only 75p per person. Absolute bargain! Healthy, tasty and cheap, what more could you want.

Now get yourself to the shops, pick up everything you need and give this a try. You won’t regret it.

  • 1 tsp coconut oil
  • 6 Good Quality Pork Sausages, quartered
  • 1 medium onion, chopped
  • 2 x garlic cloves, crushed
  • 1 tsp chilli flakes
  • 1 tsp oregano
  • 2 x 400g tin of chopped tomatoes
  • 1 tbsp. tomato puree
  • Broccoli forets
  • Boiling water
  • Penne or Fusilli pasta


1 Heat the oil in a large pot over a medium temperature. Add the sausages to the pot and cook gently for 10 minutes. Ensure the temperature is not too high as you don’t want the sausages to fry

2 Add the garlic and onion to the pot and sauté with the sausages for 2 – 3 minutes until softened

3 Next put all the remaining ingredients into the pot including enough pasta to feed 4 people. Stir all the ingredients to combine and then cover the pasta with boiling water so the pasta is just covered. Stir well and leave to cook on a medium temperature

4 Once the pasta has cooked and sauce has thickened, serve immediately in warm bowls

Top Tip: If your sauce has not thickened, usually due to too much water, add a little corn flour and mix well. It will help to thicken the sauce.
